Start off by bringing the wok to medium heat and pour 1/4 cup of oil into it. Bring to heat by testing to see if a cube of spam will sizzle. If it does, dump the spam in and give a good stir. Cook for about 5 minutes.
Stir in the spicy banana ketchup, chili oil, sriracha and Chinese white pepper. Cook for 5 more minutes. Remove and scoop in a separate bowl. Bring the wok down to medium-low heat.
Drizzle a little oil in the bottom of your wok just so it is covered then drop in your whisked eggs and scramble. Once cooked, dump on top of the cooked spam. Bring the wok to medium heat.
Drop in 1/4 cup oil and drop in your minced garlic. Be careful not to let it burn, but just allow it to become translucent and fragrant. Once that is done, drop in your rice and stir it.
Push the rice to the outer sides of the wok, making a hole in the middle. Drop the egg in the hole and mix it throughout the rice. Cook for 5 minutes.
Now add back in your cooked eggs and spam. Mix well and cook 5 last minutes.
Serve with a drizzle of sriracha on top. If you like the look of my fried rice, just get any size bowl or pyrex container you prefer and press it in before plating it.
