A crispy butter croissant + perfectly poached eggs + bacon + green onions = HEAVEN!These croissants are a must at the next brunch you hold. They are relatively simple but look so fancy! Everyone will be impressed.
1 Chef'n egg poacher* I got mine at World Market for $10 (you can also get online)
Ingredients
eggs
croissants
chopped green onions
crumbled bacon
Instructions
Start off by poaching your eggs. If you are using the same poacher that I am, spray it with a. little oil and place the poacher in a pot. Fill water to the rim of the poacher and bring to a boil. Prepare your egg into a small bowl for easy transfer later. Once the poacher starts to swirl, tornado-like, drop your egg into it and cook 2-4 minutes. Start toasting the croissants.
When the egg is cooked, pour out excess water and drop gently onto a prepared plate with a kitchen towel on it. Before cooking your next egg, make sure to rinse off the egg poacher and re-spray with oil. Then, make sure the water is clear of any leftover egg. Repeat cooking process.
Cut open the croissant and place your poached egg. You will then top it off with the green onions and crumbled bacon. Serve with a mimosa and enjoy!
