Brunch Croissants

- 1 Chef'n egg poacher* I got mine at World Market for $10 (you can also get online)
Ingredients
- eggs
- croissants
- chopped green onions
- crumbled bacon
Instructions
- Start off by poaching your eggs. If you are using the same poacher that I am, spray it with a. little oil and place the poacher in a pot. Fill water to the rim of the poacher and bring to a boil. Prepare your egg into a small bowl for easy transfer later. Once the poacher starts to swirl, tornado-like, drop your egg into it and cook 2-4 minutes. Start toasting the croissants.
- When the egg is cooked, pour out excess water and drop gently onto a prepared plate with a kitchen towel on it. Before cooking your next egg, make sure to rinse off the egg poacher and re-spray with oil. Then, make sure the water is clear of any leftover egg. Repeat cooking process.
- Cut open the croissant and place your poached egg. You will then top it off with the green onions and crumbled bacon. Serve with a mimosa and enjoy!
