THE BEST Chicken Salad
This chicken salad is a healthier alternative to the original, BUT IS JUST AS SATISFYING! It is one of my favorite meals filled with protein. It is the best snack that is great for even a high tea!

Ingredients
- 2 tbsp pickle juice or white vinegar
- ⅓ cup mayo AVOCADO MAYO IF POSSIBLE
- ⅓ cup greek yogurt
- 1 tbsp yellow mustard or dijon
- 1 tsp stevia
- 4 tbsp fresh dill
- 2 cups rotisserie chicken chopped or shredded
- 1 cup celery chopped
- ⅓ cup red onion finely chopped
- ⅓ cup almonds chopped or slivered*
- ½ tsp salt
- 1 tsp garlic powder
- 2 tsp pepper
Instructions
- Start off by mixing your sauce base together, so mix the pickle juice, mayo, greek yogurt, yellow mustard, stevia and fresh dill.
- Mix in all the rest of your ingredients with spices being last. Make sure to do a taste test and add more of the ingredients to your liking!
- Serve on sandwiches, as a dip with crackers, or just a snack all by itself! Top with fresh dill for extra flavor.

*I like to just throw mine in the food processor to chop them a bit
