Spinach Feta Egg Bites
Easy peasy breakfast packed with protein. Whether by themselves or wrapped in a tortilla, these egg bites are perfect for meal prepping. It is so simple and so YUMMY.

- 2 cupcake pans
Ingredients
- 3 tbs olive oil FOR GREASING
- 16 lg eggs
- 8 oz spinach chopped
- 6 oz feta cheese
- ½ cup cottage cheese
- ½ cup milk
- ½ tsp salt
- 1-2 tsp pepper
Instructions
- Preheat oven to 375.
- Grease the cupcake pans with olive oil.
- In a large bowl, beat eggs. Stir in all other ingredients.
- Pour the egg mixture so each slot is about 3/4 full.
- Bake for 15-20 minutes or until the eggs are to desired texture and not runny.
- Cool completely in pan OR on a wired rack.
Notes
Refrigerate these for up to 5 days and microwave for 30 seconds.
Freeze these for up to 3 months and microwave for 1 to 1 1/2 minutes.
The BEST way to freeze these is in a freezer-safe ziplock bag with layers of parchment so they don't stick together.
