Spinach Feta Egg Bites

Spinach, feta, and A BEAUTIFUL BREAKFAST. This breakfast is perfect for meal prepping and having a breakfast you can take on the go. This will make 2 dozen egg bites that are easy to freeze and reheat!

Spinach Feta Egg Bites

Easy peasy breakfast packed with protein. Whether by themselves or wrapped in a tortilla, these egg bites are perfect for meal prepping. It is so simple and so YUMMY.

Equipment

  • 2 cupcake pans

Ingredients
  

  • 3 tbs olive oil FOR GREASING
  • 16 lg eggs
  • 8 oz spinach chopped
  • 6 oz feta cheese
  • ½ cup cottage cheese
  • ½ cup milk
  • ½ tsp salt
  • 1-2 tsp pepper

Instructions
 

  • Preheat oven to 375.
  • Grease the cupcake pans with olive oil.
  • In a large bowl, beat eggs. Stir in all other ingredients.
  • Pour the egg mixture so each slot is about 3/4 full.
  • Bake for 15-20 minutes or until the eggs are to desired texture and not runny.
  • Cool completely in pan OR on a wired rack.

Notes

Refrigerate these for up to 5 days and microwave for 30 seconds.
Freeze these for up to 3 months and microwave for 1 to 1 1/2 minutes.
The BEST way to freeze these is in a freezer-safe ziplock bag with layers of parchment so they don't stick together.
