Taco Soup

The weather is cold and you feel like something to warm you up. Well, this is the answer! It is both delicious and nutritious! Taco soup is everything that you would want in a taco but in soup form. It is delicious and filling. I love to top it with some light sour cream, fresh cilantro as well as black pepper and hot sauce! Try this recipe even if it isn’t cold outside!

Taco Soup

Turkey meat, beans, diced tomatoes and spices all marry together into a delicious soup that is full of taco flavor. I like to top mine off with light sour cream, fresh cilantro, black pepper, cheese and hot sauce!

Ingredients
  

Soup

  • ¼ cup olive oil
  • 2 cloves minced garlic
  • 1 red onion diced
  • 1 lb turkey meat
  • 1 32oz can beef broth
  • 1 15oz can tomato sauce
  • 1 28oz can diced tomatoes
  • 1 15oz can low sodium kidney beans
  • 1 15oz can low sodium pinto beans
  • 2 15oz cans no salt added corn
  • 1 4oz can green chilies
  • 1 lime juiced
  • 2 jalepenos chopped finely
  • 2 tbsp hot sauce
  • 2 tsp cumin
  • 1 tsp chili powder
  • 1 tsp cayenne pepper
  • ½ tsp oregano
  • salt and pepper to taste

Topping

  • cheese
  • hot sauce
  • sour cream
  • cilantro chopped
  • tortilla chips crushed
  • hot sauce

Instructions
 

  • *Start off by adding the oil to your dutch oven on medium-low heat. Test the oil by throwing a piece of chopped onion in to see if it sizzles. Once the oil is ready, add in your chopped onions and minced garlic. Simmer until translucent and fragrant. Then toss in your turkey meat and brown. Because we are making soup, draining isn't necessary but you can if you would like.
  • **To this, add all of the rest of ingredients for the soup starting with the broth and tomato sauce. Simmer with the lid on for 30 minutes.
  • Serve with any toppings of your choosing! I would even recommend black olives, avocado, or green onions if you want to get wild. 🙂

Notes

*Note: If you would prefer a crock pot method, complete step 1 in a skillet so you can transfer the taco meat mixture into the crockpot.
**Note: Crockpot method will be the same, but you will cook on high for 2 hrs or low for 4 hours
