Churro Cupcakes

A super simple recipe that is quick and easy to whip up. A lovely pairing of cinnamon sugar, cream cheese frosting and dulce de leche all atop of a cinnamon cupcake.

I make these cupcakes for every Cinco De Mayo! Sometimes if I don’t have the time to frost every cupcake I will just make a cake! Either way, this dessert gets DEVOURED. Everyone always loves these and asks me for the recipe, so here you have it!

Churro Cupcakes

This recipe is perfect for any get-together. Make them on Cinco De Mayo for the ULTIMATE dessert. Trust me, you will be the talk of the party!

Ingredients
  

Cupcakes

  • 1 box white cake mix (follow the recipe on the box with these adjustments below)
  • ½ cup butter MELTED/COOLED (replacement for oil)
  • 1 cup milk (replacement for water)
  • 4 lg eggs (instead of amount called for)
  • 2 tbsp cinnamon
  • 2 tsp vanilla extract

Cinnamon Cream Cheese Frosting

  • 2 8oz cream cheese SOFTENED
  • 1 cup butter SOFTENED (unsalted)
  • 2 tsp vanilla extract
  • ¼ tsp salt* (omit if using salted butter)
  • 6-7 cups powdered sugar (add more than 6 adjusted to taste)

Filling

  • 2 cans dulce de leche (I use La Lechera Dulce De Leche)

Toppings

  • ½ cup sugar
  • ¼ cup cinnamon
  • 2 tbs butter (melted)

Instructions
 

Cupcakes

  • In a stand-mixer or large bowl using a hand mixer, follow cupcake directions according to package. The only things that will change is subbing out butter for the oil, milk for the water, adding one extra egg and also adding cinnamon and vanilla extract.
  • Let cupcakes cool on a rack for 15 minutes. You can start on the frosting at this point!
  • Melt your 2 tbs of butter. Brush each top of the cupcakes with a generous amount.
  • Sprinkle cinnamon sugar all over.
  • Take out the center of each cupcake using an apple corer or cupcake core tool.
  • Place dulce de leche from the can directly into a piping bag. Fill each cupcake middle with dulce de leche.

Cinnamon Cream Cheese Frosting

  • To a stand mixer or large bowl with hand mixer, add cream cheese and butter. Mix on medium to high speed until creamy.
  • Add in your vanilla extract and cinnamon. Mix until incorporated.
  • Add your powdered sugar one cup at a time then mix until you reach desired consistency. I used about 5 1/4 cups in total.
  • One your frosting is complete, pipe onto each cupcake. I like to use a star-tip for this since it looks like the texture of a churro!
  • Add cinnamon sugar and any other sprinkles you'd like to the top of each one!
